Herringbone is the traditional zig-zag and forgives a squarer room; chevron is the continuous arrow and wants a room with length. Chevron blocks are mitred, so the setting-out is less forgiving and the border matters more. The comparison guide takes it further.

The oak chevron is for dry rooms. For a patterned floor in a kitchen the rigid-vinyl herringbone, listed as waterproof, is the range to look at; there is no vinyl chevron in the range.
In a let, the washing machine is the commonest source of water damage, and a slow overflow runs under the appliance where nobody looks. Specify the utility corner for standing water, and avoid tucking the floor beneath a machine that will have to be pulled out one day.
