Herringbone is the traditional zig-zag and forgives a squarer room; chevron is the continuous arrow and wants a room with length. Chevron blocks are mitred, so the setting-out is less forgiving and the border matters more. The comparison guide takes it further.

The oak chevron is for dry rooms. For a patterned floor in a kitchen the rigid-vinyl herringbone, listed as waterproof, is the range to look at; there is no vinyl chevron in the range.
In a period house with heavy furniture, ask about indentation resistance rather than only about scratching — they are different properties, and a floor can be strong against one and weak against the other. Wide felt pads and soft castors then protect whatever you choose.
