Herringbone is the traditional zig-zag and forgives a squarer room; chevron is the continuous arrow and wants a room with length. Chevron blocks are mitred, so the setting-out is less forgiving and the border matters more. The comparison guide takes it further.

The oak chevron is for dry rooms. For a patterned floor in a kitchen the rigid-vinyl herringbone, listed as waterproof, is the range to look at; there is no vinyl chevron in the range.
For a holiday let, choose something indifferent to the humidity around it and fit the same range throughout so a repair between bookings is quick. Allow the boards their settling time before fitting, even when the changeover is tight — that hour saved is the one that costs later.
